Oct. 06--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of September 24 to September 30.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.

-Container of cooked seafood, a refrigerated, ready to eat time temperature control for safety food in the cook line area, was date-marked by the facility, but was beyond the 7 day use or sell by date and requires discarding. Corrected on site.

-Observed plate of scallop kebobs laying in ponding condensate water in bottom of bain marie on cooks line. Corrected.

-Food racks in the walk in cooler area contain trays of various foods stored open with no covering. This is a previous violation.

-Chopped salad lettuce in chopping machine holding bin was stored at 53 degrees F on kitchen line area instead of 41 or below. Lettuce removed and discarded.

-Interior of the ice machine has a mold build up on sides, top and chute of machine.

-Facility is no longer using wiping buckets and follows the following procedure for food contact surfaces in front end: Wash, rinse, sanitize, dry wipe. Facility was notified that the Quat sanitizer in use requires a 1 minute contact time and wiping sanitizer off does not ensure proper sanitization per manufacturers directions. Corrected on site by adjusting procedure used on site. The Quat sanitizer level in the sanitizing spray bottle was at 0ppm at the time of inspection. Corrected on site by dumping sanitizer and refilling with fresh sanitizer found to be at 200ppm. Facility re-sanitized all food contact surfaces with new sanitizer.

-The designated handsink in the food prep area was blocked by a bucket full of items which were in the sink. The sink was not accessible for employee use. The sink was also filthy. Remove all items from the sink and clean and sanitize the sink immediately. Maintain the sink in a clean and sanitary condition and available at all times.
