June 01--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of May 20-26.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Foods located in the refrigerator and the bain marie are being stored without coverings. Cover all foods during storage.

-The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by incorrect responses to food safety questions.

-Soda gun, ice machine, food contact surfaces, were observed to have remaining slime and balack residue and was not clean to sight and touch. Facility should continue cleaning units

-Knives and magnet holder over the 3 bowl sink, a food contact surface, was observed to have food residue and was not clean to sight and touch. Corrected on site by pulling and cleaning at time of inspection.

-Ready made salads at the sandwich station cold well, were not being maintained at or below 41 degrees F. There was a large amount of food in the containers, inhibiting the full amount of product from being adequately cold held. The cold wells are not capable of keeping large amounts of food cold. When keeping food in cold wells, display smaller quantities of food in their constituent containers. The food was moved into another unit.

-The hand wash sink at the sauté station had melting ice in it, indicating uses for purposes other than hand washing. Only hand washing can occur at hand wash sinks.

-A bag of sugar with a mouse dropping was observed in the facility. A bag of sugar that had been chewed through by mice was observed in the facility. Food which has become adulterated by pests must be discarded. The product was discarded.

-Sausage at an internal temperature of 54 degrees F and mushrooms at an internal temperature of 65 degrees F were observed in the top of the pizza preparation unit. All food in cold holding must be maintained at or below 41 degrees F. The out of temperature food was discarded.

-The two slicers and the can opener blade were dirty. Clean and sanitize these items.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The Person in Charge must know and enforce food safety in the facility.

-The pizzas being held at room temperature were not labeled. Pizzas held at room temperature must be labeled with either a "made at" or "discard by" time. The pizzas must be discarded after four hours.

-Several food items such as broccoli, rice, and cut cabbage were stored open with no covering. Cover all food to prevent contamination.
