Aug. 03--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of July 22-28.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Facility does not have written procedures for employees to follow when responding to an event involving vomitus or fecal matter discharge onto surfaces within the facility.

-There is observable black mold like residue inside the Hoshizaki Ice Builder and old product build up on the Fleetwood slicer.

-The firm is using raw surf clams for sashimi (Clearwater brand-Process Code 043C, Packed 1/16/18-sell be 1/16/20, Original Source NB 439 RP). Product labeled as blanched only (not fully cooked) and failing to maintain tracking information OR have documentation from original processor that the product is fully cooked.

-Upon entrance to this firm one male employee (sushi chef) observed portioning and preparing fresh creme cheese with direct bare hand contact.

-The firm has failed to establish a HACCP plan for parasite destruction and pH monitoring of sushi rice or civeche (tuna, yellowtail and escolar). The firm has no buffers to verify the pH as indicated on the records being made made and maintained on site this date.

-The sashimi show case had ambient air temperature of 47.8*F with internal temperatures (as measured with calibrated stem thermometers in presence of management) ranging from Tuna-47.3*F, Salmon-43*F, Imitation Crab meat-51.2*F at 11:37 AM this date.

-The hand wash station on the south end of the prep area on the hot side was blocked by numerous towels, heavy duty plastic gloves. The hand sink adjacent to the ware washer had no functioning running hot water.

-Refrigerated Ready To Eat (RTE) food products in walk in cooler including cut and shredded leafy greens, cooked shrimp and similar products lack any code dating.

-Raw pork was stored above produce in the downstairs walk in cooler. Produce should be stored above raw animal products.

-The handwash sink in the dish room area was blocked by buckets and not accessible at all times for employee use. Hand wash sinks must be made accessible at all times.

-Chicken was observed thawing at room temperature on the counter top, which is not an approved thawing method. Thaw product in the refrigerator or under cold running water that is 70F or below.

-The upper portion of the bain marie exhibited an ambient temperature of 60F and cheese stored in that section had a temperature of 61F. Any potentially hazardous food stored in that unit was discarded. Additionally, the walk in cooler exhibited an ambient temperature of 47F. The meats were relocated to the freezer.

-Macaroni salad stored on ice in a cold hold unit exhibited a temperature of 48F. Salad was moved to the refrigerator.
