Oct. 12--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of Sept. 30 to Oct. 6.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Soap and paper towels were not provided at the hand washing sink for the bathroom. Provide soap and paper towels at this hand washing sink.

-Live roaches were observed on glue traps in the facility. Contact your exterminator and have the facility treated for roaches. Provide proof of treatment at re-inspection. Pests must be eliminated from the facility.

-Salami, cheese and eggs were observed in the deli case at internal temperatures of 55, 56 and 53 degrees F; respectively. All food in cold holding must be maintained at or below 41 degrees F. The out of temperature product in this unit was discarded.

-A customer was permitted to enter a food preparation area to access the bagged ice. Customers are not permitted in this area. If the ice is kept in this area, an employee must get the ice for the customers.

-Soap and paper towels were not provided at the hand sink in the kitchen. Provide these items at this location.

-A food employee was observed eating in a food preparation area. There may be no eating in food preparation areas.

-There was no person in charge at the beginning of the inspection. A person in charge must be designated at all times while the facility is in operation.

-Items intended for hot holding were found setting outside of the hot holding unit at the front counter area. Fried plantains and cooked yucca were at internal temperatures of 89 and 86 degrees F; respectively. All food in hot holding must be maintained at or above 135 degrees F. The out of temperature product was discarded.

-Macaroni salad in the deli case was found at an internal temperature of 53 degrees F. All food in cold holding must be maintained at or below 41 degrees F. The out of temperature product was discarded.
