Here are the results of food safety inspections in Lehigh and Northampton counties for the week of Feb. 9-15.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department’s statewide inspection database.

The violations listed here are those that are classified as “Foodborne Illness Risk Factors and Public Health Interventions,” which can result in illness if not corrected. -Chicken in the bain marie was 80 degrees F. Chicken was placed directly in the bain marie after cooking. Corrective action was possible chicken was moved to the walk-in cooler. Cool food from 135\u00b0F to 70\u00b0F in 2 hours and/or from 135\u00b0F to 41\u00b0F within 6 hours, after preparation and use appropriate cold holding units.

-Severely dented, swollen, distressed canned items observed in sales are and intended for use or sale in the food facility. Remove dented cans from sales shelves.

-The handwash sink in the prep area was blocked by food cases and not accessible at all times for employee use. Boxes moved at time of inspection

-The Person in Charge did not demonstrate adequate knowledge of the PA Food Code as evidenced by results of this inspection.

-Date marking was not observed on any food preparation at the time of this inspection. Any product prepared onsite and held longer than 24hrs needs to be date marked with the day it was produced and a discard date that is six days from its production date.

-Raw chicken was being stored above raw pork and plantains in the walk in cooler. In the same unit, Raw pork filling for dumplings was observed to be stored above ready to eat(RTE) foods. Raw chicken must be stored below other raw proteins. RTE foods must be stored above raw proteins such as pork.

-A damaged, leaking can of pineapple juice was observed to be mixed in with undamaged product that was intended for use. Additionally, this can was leaking onto a bag of rice stored below it. Segregate damaged product to avoid contamination and or accidental use. Clean outside of rice bag before opening.

-Dough mixer in the dish washing room had residue on it and is a food contact surface. Wash, rinse, and sanitize the mixer’s components.

-Deli slicer was not clean. Clean slicer after each use or every four hours if used continuously. Slicer was cleaned during inspection.

-Soap was not available at the hand wash sink in the hall by the deli preparation and towels were not available at the sink in the deli preparation. Provide towels and soap for all hand washing sinks. Corrected on site.

-Foods in the top of the Bain Marie were held at 47 degrees F and above, including cut tomato, chopped lettuce, and mayonnaise and other sauces. Corrective action was possible and food items were moved to other refrigeration units. Do not use the upper portion of the Bain Marie unit until it is capable of maintaining temperatures of 41 degrees F or below.

-Various frozen seafood and sushi items are frozen by manufacturers and repackaged by firm without labels of product or repackage/manufacturer date.
